Macadamia Herb-Crusted Salmon
Tender salmon topped with a crisp macadamia and herb crust, served with garlic sautéed broccolini.

Preheat the oven
Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly coat it with cooking spray.

Make the macadamia crust
Combine the chopped macadamia nuts, parsley, thyme, minced garlic, olive oil, lemon juice, sea salt, and black pepper in a small bowl.

Prepare the salmon
Pat the salmon fillets dry. Place them skin-side down on the prepared baking sheet and spread a thin layer of Dijon mustard over the top of each fillet.

Add the topping
Divide the macadamia mixture between the fillets. Press the mixture gently onto the salmon so it forms an even crust.

Bake the salmon
Bake for 12 to 15 minutes, depending on the thickness of the fillets. The salmon should flake easily with a fork and reach your preferred degree of doneness.

Sauté the broccolini
While the salmon cooks, heat one teaspoon of olive oil in a large skillet over medium heat. Add the sliced garlic and cook for approximately 30 seconds.

Steam and finish
Add the broccolini and water. Cover and cook for 4 to 5 minutes. Remove the lid and sauté for another 1 to 2 minutes, until tender-crisp.

Serve
Divide the broccolini between two plates. Add one salmon fillet to each plate and finish with fresh lemon wedges.
